Sunrise is used as the reference moment because Vedic day boundaries begin at sunrise, not midnight. The readout matches what a Vedic panchang for that date would report.

Sunrise-based reference — matters for boundary days
When Jupiter changes sign at, say, 2:47 PM on a Tuesday, the sunrise-based readout will show the previous sign for Tuesday and the new sign for Wednesday's sunrise.
